Berry Cherry Almond Crumb Pie
Ingredients:
- 4 cups fresh CHERRIES, pitted*
- 2 cups fresh BERRIES* (combo of berries or one of your favorites)
- 1/4 cup UNSALTED BUTTER
- 1/4 cup BROWN SUGAR, packed
- 1/4 cup ALMOND PASTE
- 1/2 tsp LEMON ZEST*
- 1/2 cup ALL PURPOSE FLOUR
- 3/4 cup SUGAR
- 3 Tbsp CORNSTARCH
- 1 Tbsp fresh LEMON JUICE*
- 1 9" FROZEN PIE CRUST*
Procedure:
Combine butter, brown sugar, almond paste & lemon zest in a bowl and beat with an electric mixer until smooth. With Mixer on low speed, gradually beat in flour just until crumbly. Set topping aside. Preheat oven to 425*F. Combine sugar and cornstarch in a large bowl. Gently stir in cherries, berries and lemon juice. Turn filling into frozen pie shell. Sprinkle topping evenly over top of pie. Place pie on a cookie sheet and bake for 15 minutes. Reduce oven temperature to 375*F. Bake 45-50 minutes longer, or until filling is bubbly in the center. Let cool completely on a wire rack. Serves 8
