October - Pear Cranberry Crumble Pie

  • 1 9" unbaked Pie Shell*
  • 1 cup Sugar, divided
  • 2 TBSP Cornstarch
  • 1 Tsp Lemon* Peel
  • 3 TBSP Lemon* Juice
  • 7 cups peeled, cored and sliced Pears*
  • 1/2 cup Flour
  • 1/2 Tsp Ground Ginger
  • 1/2 Tsp Cinnamon
  • 1/4 Tsp Nutmeg
  • 1/4 cup Butter*

Combine 1/2 cup sugar, cornstarch and the lemon peel.  In a large bowl, sprinkle pears with lemon juice.  Add sugar mixture and cranberries to pears and toss to coat..  Fill pie shell with the mixture. 

To make topping: combine flour, 1/2 cup sugar and all spices.  Cut in butter until mixture resembles coarse crumbs.  Sprinkle crumbs over pear filling.  Cover edge of pie with foil to prevent over baking.  Bake for about 40-50 minutes or until pie is bubbly and crust is golden brown.
